COFFEE GROWING IN CARMO DE MINAS HAS BEEN IN THE PEREIRA FAMILY SINCE 1979. THEY STARTED BY PLANTING NEW VARIETIES WHILE DEVELOPING NEW HARVESTING AND PROCESSING TECHNIQUES TO IMPROVE QUALITY ON THE FARM. SINCE MAKING THESE CHANGES, THE COFFEES FROM SANTA INÊS HAVE STOOD OUT IN REGIONAL AND NATIONAL CONTESTS. THE FARM IS PLANTED WITH CATUCAI, YELLOW & RED CATUAI, YELLOW & RED BOURBON, AND ACCAIA ON 100 HECTARES OF LAND WHILE THE REST OF THE LAND IS SET ASIDE FOR THE GROWING OF OTHER AGRICULTURAL CROPS SUCH AS BANANA AND CORN. ANNUAL PRODUCTION IS APPROXIMATELY 4,000 BAGS EACH YEAR. KNOWN FOR ITS CHARACTERISTIC SWEETNESS, NUTTINESS AND CHOCOLATE FLAVOURS, THIS CLASSIC YELLOW BOURBON LOT IS TYPICALLY SPREAD TO DRY ON PATIOS OR RAISED BEDS. THE DRYING TIME CAN TAKE 20-25 DAYS, DEPENDING ON THE WEATHER.
