Another outstanding example from the world of Washed Mids: A coffee that bridges the gap between the easy basic filter and the complex fruit bombs or delicate floral delicacies. A filter to drink every day, cup after cup while discovering the more hidden fruity and floral notes and enjoying the lively and refreshing acidity.
Expect a very clean cup with notes of caramel, hibiscus and raspberries.
This beauty of a coffee is produced by Fabian Acevedo, a fourth generation coffee farmer in Huila, Colombia. His father got him involved in coffee and interested in learning about fermentation and boosting the quality of his product.
Only the ripe cherries are picked and put into plastic hoppers where they undergo an oxidation for 14 hours. Then the coffee is depulped and fermented in tanks for 24 hours, after which water is added to the tanks and the coffee remains submerged for another 24 hours. After washing, the parchment is dried in a drying shed for 15 days.
