Some coffees are selected because they taste extraordinary. Others because they represent a way of producing coffee that deserves to be shared. We selected this Sidra from Finca Soledad because it is one of the purest expressions of what Pepe Jijón has spent years building in Ecuador. His coffees are never defined by intervention alone. They are shaped by a landscape that has been restored, protected and patiently cultivated until coffee becomes part of the ecosystem rather than separate from it. For us, Finca Soledad represents one of the clearest examples that exceptional coffee begins long before harvest. The cup is elegant and composed. White peach and citrus lead into honey sweetness, white grape and delicate jasmine florals. A silky, tea-like texture carries vibrant acidity through a remarkably clean and lingering finish. Every sip feels transparent, allowing the Sidra variety to speak with remarkable precision. High above the Intag Valley in Ecuador, Finca Soledad sits within a UNESCO Global Geopark surrounded by protected cloud forest. Although the estate covers more than 120 hectares, coffee is cultivated on only five. The remainder is preserved or actively reforested, with more than 25,000 native trees planted since Pepe established the farm in 2010. This lot was produced using Pepe's signature Wave Washed process, a method built around slow, temperature-controlled fermentation, gentle handling and extended shaded drying. Rather than adding character, every stage is designed to preserve freshness, sweetness and clarity, allowing the terroir and the Sidra variety to remain at the centre of the experience. This is our first release from Finca Soledad and the most exclusive coffee we have introduced within our Specialty Range. We are also offering a limited collector's bundle featuring this Wave Washed Sidra in a jar together with the Wave Experimental edition in our signature competition box—a rare opportunity to experience two interpretations of the same philosophy, side by side.
