The body is light with a sweet finish. Clean Funky Terroir Experimental About The Producer Yesica has made coffee production a family affair. Once she took over her family’s farm, she ensured that Finca el Rosal would be a family focused operation where everyone contributes and learns from each other. Her husband oversees land management and hand picking labours, while she manages the processing and drying of the lots. In addition to her farming responsibilities, Yesica has been passing along her coffee expertise to her children. Her eldest son currently collaborates with her in the depulping and washing stages of processing. Processing This washed Chiroso lot is handpicked by her family and floated to sort out outliers based on density. The cherries are then depulped the day of harvest and fermented in mucilage for approximately 84 hours. From there, the coffee is thoroughly washed and dried on raised beds until it reaches a moisture content of approximately 10.5%. In the future, Yesica and her family hope to expand their cultivation to include exclusive varieties like Geisha. Variety Chiroso is a newer variety being grown primarily in the region of Antioquia, Colombia. The variety has been genetically identified as an Ethiopian Landrace and is becoming very popular because of it's quality potential, but we do not yet know much more about Chiroso as an industry at this time.
