This coffee has a light body and a sparkling finish. Clean Funky Terroir Experimental About The Producer Gildardo is a husband to Yolanda Bolaños and father to four children. Together, they grow and process coffee on his farm, El Calamar. The farm is located high in the mountains of Paicol on the western edge of Huila. In recent years, Gildardo and his family have won numerous awards in their local cup competitions. Their Pink Bourbon lot continues to impress the most demanding of clients. Processing Gildardo handpicks the Pink Bourbon cherries at their peak ripeness. The selected cherries are floated to remove any defects. They are then fermented in parchment for an additional 48 hours prior to washing. The washed seeds are then dried on raised beds for approximately 20-25 days. Variety Pink Bourbon is a variety primarily grown in Huila. Though newer than other varietals, it has quickly grown in popularity for its bright, sweet, and aromatic profiles. It is now known to be an Ethiopian Landrace. Transparency We Paid 21.34 USD/KG Roasted Costs $26.54 USD/KG This is our third year working with Gildardo Lopez and his phenomenal coffees. This particular Pink Bourbon has a juicy acidity that reminds us of lemonade, a deep sweetness reminiscent of fresh blackberries and cherry, a citric acidity like grapefruit and delicate florals.
