Clean Funky Terroir Experimental About The Producer Faver’s coffee journey began about 25 years ago, when he learned everything he knows about coffee production from his father and neighbors. About six years ago, he became very interested in coffee varieties and specialty coffee. His four children also were involved in this process, and now they all participate in the farm´s production; each of them owns their own coffee plants and carefully selects the varieties they want to grow to contribute to the family’s economy and their own. Processing Cherries are hand-selected and spend 12-14 hours fermenting in cherry. They are then de-pulped and dry fermented for 72 hours with a yeast concentrate prior to drying for 72-84 hours. Variety Papayo is a rare arabica variety from southern Colombia, known for cherries and seeds that grow long and tapered instead of round. Growers named it for that shape: the fruit narrows to a point at one end like a small papaya. It is a farmer-named variety rather than a bred and released cultivar, which is why it carries no institutional pedigree and no release date. Transparency We Paid $17.82 USD/Kg Roasted Costs $22.99 USD/Kg This is our first harvest featuring Faver Ninco and his family and our first time ever featuring the Papayo varietal.
