We selected the prized Bernardina variety to undergo a hybrid anaerobic (without oxygen) and honey process. It was fermented as whole cherry for 72 hours with- out oxygen and dried as a honey. The colour of the coffee present hues of burgundy, copper, and gold, reminiscent of the sunsets of Finca El Retiro.
