The Peru El Bebedero has a significant violet-like aroma, directly translating into the taste. The vibrancy of the violet flower notes and concord grape juiciness stay throughout the cup, giving this natural coffee a very unique profile. After overnight fermentation and a 20 day drying process, fruits of these trees were able to soak all the positives of small fermentation. This boosts the purity of natural sugars and acids that translated so well in the sweetness and mouthfeel, with the complexity of cotton candy sugar and texture too. This is our first coffee from Yellow Rooster Coffee Imports and we are very excited to start working with them, as they carry incredible coffee selection, such as this Peru is a great example of dedication to long-term relationships with Germán Carranza Barboza, a 28-year-old coffee producer from the village of Gracias a Dios in the Amazonas Region. El Bebedero, translates to "The Drinker," is a nod to the natural springs found in the area that supply the farm and the animals. Driven in part by his farm being mostly between 1600-1700 masl, Germán hand picks the fruit for washed, honey, and natural process coffees as well as experimenting with new fermentation styles and uncommon varieties for his region.
