This high-elevation coffee has a lingering sweetness with notes of lemon grass, lime, lemon verbena, white florals and pears. Filter coffee:Delicate, clean and tea-like cup with candylike sweetness, pears, lemon verbena, and jasmine. The Producer:Eudis Orosco and his wife Victoria produce exceptional coffee on their low‑intervention farms. The landscape is lush, dense, and highly shaded, giving the farms a wild, forest‑like character often compared to Ethiopian forest coffee systems. The farms are semi‑forest plots shaded by Cedro, Targo, Roble, and Yanay trees. This diverse canopy moderates sun exposure, supports biodiversity, and contributes to slow, even cherry ripening. All production is fully organic, with coffee plants fertilized exclusively using compost and bird guano— traditional, locally sourced inputs common throughout the Incahuasi Valley.Like all producers in Incahuasi, Eudis and Victoria farm organically. All coffees are dried on African‑style raised beds, allowing for consistent airflow and careful moisture control. To further stabilize drying and improve consistency, they plan to build covered drying rooms for upcoming harvests. The combination of high altitude, abundant shade, and low‑intervention farming results in coffees with notable sweetness, depth, and structure.Eudis is one of the few producers in the valley actively experimenting with fermentation techniques. Some lots undergo a two‑stage fermentation process, beginning with a short whole‑cherry fermentation in plastic bags before pulping, followed by dry fermentation and washing.
