She welcomes every delivery, guiding cherries through flotation, brix checks, and intake logs before selecting their post-harvest path. During harvest the mill becomes a collective heart. Local jobs blossom—hand-sorting, turning, boiling, moisture checks—and the patio turns into a forum where producers discuss shifts, prices, and goals. Today, over 150 Tsotsil producers from Aldama and neighboring communities turn scattered cherries into aching single pulse of quality and trust.
