Founded in 2018 in San Pedro Cotzotln, Aldama. Beneficio Comunitario San Pedro beats under the eye of Inez Vásquez. She welcomes every delivery, guiding cherries through flotation, brix checks, and intake logs before selecting their post-harvest path.
During harvest the mill becomes a collective heart. Local jobs blossom—hand-sorting, turning, boiling, moisture checks—and the patio turns into a forum where producers discuss shifts, prices, and goals.
Today, over 150 Tsotsil producers from Aldama and neighboring communities turn scattered cherries into aching single pulse of quality and trust. Coffee leaves the highlands with its identity intact, proving a Beneficio Comunitario can be a laboratory, town hall, and home—a resilient model
