Colombia - Cofinet Smallholder Honey Varietal – CastilloPreparation – HoneyLocation – VariousAltitude – 1800-1900 maslImporter - Cofinet You might have noticed that Colombia has become one of our favourite origins and features almost as frequently as Rwanda and Costa Rica! Colombia has always been famous for producing high-quality coffees but we are continually impressed with the interesting and unusual micro lot samples that are sent to us.This coffee comes from Cofinet, a Colombia-owned business that produces and exports coffees around the world. They represent not only their own farms but many small producers in Colombia with a focus on producing high cup score microlots using careful harvesting, and specialist processing. Farm Overview: While we love featuring single-farm coffee producers in Colombia there are a wide range of farms that aren't able to produce enough cherry to create their own micro-lots. In many cases, these coffees would be purchased and used to create large regional coffees with some farms contributing very good quality cherry that will be mixed in with lower quality coffee from other farms. To create this stunning micro lot Cofinet has worked with a range of small farmers to identify those that are harvesting high-quality cherry. These farms have then been grouped together to create a high cup score honey processed micro-lot. Harvesting and Processing: All contributing producers have carefully harvested and separated coffee from their Castillo trees. This coffee was then collected and taken to the Cofinet mill and pulped to remove the outer layer of fruit. Once pulped the coffee was dried on raised tables with careful monitoring to ensure even drying. Tasting Notes: This is a wonderful honey-processed coffee with the perfect balance of flavours. More body and fermentation than a typical washed coffee but less wild than most natural processed coffees. Tasting notes include mandarin, molasses, treacle and sweet fruit syrup finish. Brewing: This coffee works well for all brew methods. Filter: Dose 15g, water 250g. Espresso: Dose 18 gram to 40 gram yield over about 30 seconds. This coffee is available as whole bean and pre-ground but we recommend always grinding fresh before brewing. We sell a range of grinders if you would like to grind this coffee fresh at home.
