This is the sixth consecutive year that we have roasted this sun-dried coffee from the Pacamara variety grown by the Magaña family in the Apaneca region. It is a beautifully balanced, perfectly rounded, full-bodied coffee with a mellow sweetness. Each coffee cherry is hand-picked when purple, just on the verge of being over-ripe, and then slowly dried in its own pulp for over a month. The result is a rich coffee, with notes of plum, milk chocolate, nectarine and orange peel. We have known Angel and his family for 20 years, we buy their entire harvest and have visited them many times, most recently in January this year. It is a collaboration we value highly. The family is deeply committed to both the environment and quality, always striving to improve a little every year. Their philosophy is to grow and produce coffee in harmony with nature, with a deep concern for the balance of the soil and the ecosystem. Their farm is home to a variety of birds and other animals.
