This is a great showing for Chiroso and our new partnership with Oscar Palacio. His Chiroso is clean, cherry forward, full bodied with a medium sweetness. This profile is soft with a clear dimension of complimentary citrus. This is a great coffee for all types of preferences and brew styles, especially for those who might like something less intense on the acidity. We recommend enjoying this coffee on filter, immersion and espresso. Oscar is a coffee producer who learned the craft from his family. The farm spans 5 hectares where he grows 5,000 trees of the Chiroso variety. Oscar’s process begins with selective harvesting of ripe cherries, which are placed in sealed bags for three days of fermentation. After depulping, the coffee is returned to bags for another three days before being washed and dried in a marquesina for 10-14 days, depending on the weather. Oscar grew up in Jardín, Antioquia, where coffee was always part of his family’s life. His father, an experienced coffee grower, taught him the fundamentals of the craft. Years later, Oscar made the move to Caicedo at the top of Urrao's region, where he established Finca La Soledad & began cultivating Chiroso. He works alongside his brother, who also has a farm in the region, and together they share knowledge and labor. Chiroso is a varietal that recently has impressed and excited the world of coffee. It has been at the top of Cup of Excellence and a top scoring variety at FlowerChild as well. Chiroso has been identified as an Ethiopian Landrace albeit not much else is known as to how it appeared in Urrao. This coffee continues to impress aficionados and coffee people worldwide. Chiroso is still fairly difficult to acquire, & even more so, when you can experience it at this level, it is a rare treat. Please enjoy. Our coffees are best after two weeks+ of the roast date.
