Variety: Pacamara Region: La Paz, Honduras Altitude: 1,650 Meters Process: Washed Harvest: March 2026 Notes: Agave, Lemongrass & Tomatillo Mario Mejía and his crew is a new partnership for us this year and we are happy to present their iteration of Pacamara. This coffee is a bit of a change-up from our other selections in cup profile & flavor. This style of coffee is sharp with a lemony tone and detailed sweet pepper aspects. As the cup cools, there is an agave-like sweetness and thicker body with wild berry & herbacious sweetness. This is a savory-sweet style coffee that is intriguing and versatile. Mario Samuel Mejía represents a new generation of specialty coffee producers, and he is actually one of the youngest producers we work with in Honduras. Combining inherited passion with his profession as an Agronomist, he has transformed coffee production into a process of scientific endeavor. At only 26 years, he took the mantle of Finca El Jardin from his father, and has managed the farm flawlessly ever since. He began the Specialty Program in his region in January of 2019 and introduces producers in the area to Specialty Coffee. It was in 2023 that he took it up a notch, building his own Wet-Mill at the farm, and even started offering the service to producers in the Program. This coffee is handpicked and selected, before being de-pulped in the afternoon. The coffee is then wet fermented for around 50-70 hours, washed and then laid to dry in African beds, and depending on the weather and process, can take between 15-30 days due to the cold climate and higher elevation for the region. Pacamara is is compact plant with big cherries. The shrub grows best at higher elevations (1500m+). Pacamara is not homogeneous; plants are not stable from one generation to the next. This can be difficult for farmer's to deal with given the varying quality coming out of a growing nursery. It's genetic make up comes from the Bourbon-Typica family. Pacamara is a cross of Maragogipe and Pacas. It is very susceptible to coffee leaf rust whilst capable of exceptional cup quality. Our coffees are best after two weeks+ of the roast date. Order by Sunday for next Monday's roast. Shipped on Tuesdays.
