Bishan Wate sits near the Wate River and brings together cherry from around fifty smallholders farming at elevation in Guji’s red soils. For this premium day-lot, selection is meticulous, with the vast majority of cherry picked at perfect ripeness, floated for quality, and depulped the same day. The lot undergoes a longer 48-hour fermentation before drying slowly on raised beds with plenty of airflow and minimal direct sun for around 21 days.
