This Red Bourbon varietal is a mix from farmers nearby Granja Paraiso 92 owned by Wilton Benitez. The cherries are brought to his processing facility near a town called Piendamo, where he ferments the coffee for 36 hours. The coffee is then depulped, washed, and dried in his state of the art facility.
