Not to be confused with the alcohol, 'bourbon' varietal coffee refers to a type of arabica coffee plant that is typically classified as either 'red' or 'yellow' depending on the color of the ripe coffee cherries. What makes this bean special is that it comes from a rare hybrid varietal, the 'pink' bourbon, which has been cultivated by the Finca La Primavera farm in Colombia. The estate's rich, volcanic soil and innovative processing methods (washed processes with long fermentation and anaerobic stages, sometimes with pre-fermentation, followed by sun drying) also play a key role in making this coffee so sought after. To really bring out the coffee's unique flavor profile, it is processed via a 36 hour in-cherry fermentation, followed by a 36 hour dry fermentation, then washed and dried on raised beds. Flavor-wise, the La Primavera Pink Bourbon offers incredible complexity and a clean, well balanced cup. Expect subtle notes of citrus and peach, hints of delicate florals like jasmine, and a sweet finish of caramel and vanilla. Fully City (light) roasted, medium bodied and medium in acidity. A must-try!
