This is a clean, washed, mixed variety coffee from the CODECH cooperative in Huehuetenango. Manos de mujer translates to 'women's hands' and this specific lot is from all women producers – about 300 in total. Coordinadora de Organizaciones de Desarrollo de Concepcion Huista – also known as CODECH – is comprised of three sub-associations: ADAT, ADIPY, ADINTHEC. Atlas Coffee Importers – who we are working with to bring you this beautiful coffee – has been involved with CODECH since 2009, when they first started bringing these microlots to the states. In 2012, Atlas founded a cupping competition within the cooperative which brings out the best coffee from the three associations, including many single producer lots, with the goal to award the most exceptional coffees. These farms are all located within the Sierra de los Cuchumatanes, the highest mountain range in Central America. High elevations of 1,300 – 2,100 MASL means it's hot in the day and cool at night. This builds deep complexity within the cherries, yielding a delicious cup that reminds us of apple sauce, cinnamon, and frangipane
