The Gasca brothers cultivated this lot on Jhonatan's farm, Zarza, at elevations between 1,780 and 1,900 meters. The processing here was intentional and restrained: a washed approach designed to let the variety speak for itself rather than lean on fermentation. The result is something genuinely special. Soft floral notes open the cup, with peaches and cream in the body and a long finish of dark honey. It sits somewhere between a Gesha and a Sidra in personality but with a character all its own.
