ROASTER'S NOTES:

Visiting some of the individual producers from this cooperative has been incredibly insightful. Witnessing firsthand the passion they have for growing their Bourbon, in collaboration with competitors and siblings around the mountain, is truly amazing.

Each producer has their own plot on the mountain, receiving varying amounts of sunlight and shade at different times throughout the day and season. This unique positioning results in distinct characteristics for each plot, influenced by the gradient and orientation of the land.

The outcome is incredibly complex and sweet flavour profiles, enhanced by meticulous care in cultivation and harvesting. Farms in this region practice a tradition known as "Mingas", which embodies the spirit of mutual aid - "today for you, tomorrow for me". This means they take turns picking the ripe cherries from the trees based on when they are ready for harvesting.
