The project blends tradition with innovation, combining careful farming practices with agroforestry systems of native trees that support biodiversity and sustainability. This Pink Bourbon “Locura” lot undergoes a highly controlled fermentation process. Ripe cherries are handpicked and begin with a 40-hour open fermentation, followed by 40 hours of submerged anaerobic fermentation in tanks with fruit yeast inoculation. A thermal shock step helps stabilize and intensify aromatic compounds before the coffee is slowly sun-dried for around 15 days. We’ve roasted it ultra-light to let the nuances shine.
