At elevations reaching up to 2,100 masl, and surrounded by virgin cloud forest, Elida's terroir is defined by cool night temperatures, volcanic soil, and rich microbial life, all of which contribute to a cup of deep character and complexity. This lot is a Catuai varietal processed using the Natural Anaerobic Slow Dry (ASD) method. The cherries undergo a controlled anaerobic fermentation in sealed environments, then are slowly dried — often in bags — to intensify sweetness and structure while maintaining clarity. We’ve roasted it ultra-light to let the nuances shine. Expect rich notes of berries and red fruits, with vibrant cherry and raspberry wrapped in a round, structured body.
