This coffee has a bright malic acidity, with a sweet berry profile that reminds us of blackberries and raspberries. This coffee has a light body and a sparkling finish. Clean Funky Terroir Experimental About The Producer It's quite common that small-holders in Colombia produce lots that aren’t large enough to be exported on their own. However, the quality is often just as good (or better) than samples received from larger lots. As such, they are combined and processed to create this special lot. Processing The variations of fruity flavours of this lot are created by manipulating different variables before, during and after the fermentation process, such as cleanliness, temperature, batch size, fermentation time and choices between dry or wet fermentations and more and more the addition of microorganisms. The time this coffee spends in the tanks and on the drying tables is usually much longer than for commercial coffee, but differs per farmer as climatic influences and logistical issues play a role. On average, these coffees ferment from 24 to 48h and sometimes up to 72. Drying time is around 7-14 days. Transparency Imported The Coffee Quest We Paid $14.52 USD/KG Roasted Costs $19.62 USD/KG Little Pearls is a combination lot comprised of coffee from small-holders in Antioquia Colombia. As small-holder lots aren’t always large enough to be exported on their own, this is a project that allows these farmers to sell their coffee to a producer. However, the quality is often just as good (or better) than samples received from larger lots. As such, they are combined and processed to create this special lot.
