This coffee has a light body and a round finish. Clean Funky Terroir Experimental About The Producer José and his wife, Francy Helena Inga, have been farming coffee for many years. While José grew up in a coffee farming family, he left home at a young age and worked all over Colombia as a bus driver. In the last two decades, he decided to return to his roots and bought El Casino in Sinaí, Palestina. Today, he and Francy manage 10 hectares, five of which are planted with several varieties of coffee including Caturra, Pink Bourbon, Gesha and Tabi. José and Francy also have a huge soft spot for abandoned dogs and have given a home to dozens over the years. Processing José picks ripe cherries and lets them rest for around 12hrs. He then pulps the selected cherries and allows them to ferment in open plastic tanks for 30hrs. The coffee is washed and dried in solar driers. Variety Caturra is a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil sometime between 1915 and 1918. For decades, it was one of the most economically important coffees in Central America, to the extent that it was often used (and sometimes still is) as a “benchmark” against which new cultivars are tested. In Colombia, Caturra was thought to represent nearly half of the country’s production until a government-sponsored program beginning in 2008 incentivized renovation of over three billion coffee trees with the leaf-rust-resistant Castillo variety (which has Caturra parentage).
