It creates a structured and elegant cup with lemon iced tea, cashews, gooseberries, and lingering brown sugar sweetness. Filter coffee:Sweet and juicy cup with notes of lemon iced tea, fresh cashews, gooseberries, and lingering brown sugar sweetness. Espresso:Velvety cup with citrus oil, structured black tea, cashew butter, stone fruit juice, and caramel. Cappuccino/Flat white:Creamy lemon curd, marzipan, and blueberry cheesecake notes. The Producer:Imperio Rojo is the result of years of determination, transformation, and passion. What began as a dream to add value to their harvest has grown into a micro-beneficio model that allows this producer to oversee each step of their process personally. Their story is one of reinvention: transitioning from construction and heavy machinery work to specialty coffee production, driven by a desire to understand and improve what they had to offer.​The farm cultivates a diverse selection of varieties renowned for their exceptional cup quality, including Ethiopian 47, Kenya, Geisha, SL28, Villalobos, and Catugeisha. This botanical diversity is matched by an equally ambitious processing program that includes natural, honey, washed, rested-washed, double-washed, and anaerobic methods. These techniques, executed with precision and intention, are designed to highlight the unique characteristics of each variety and micro-lot. Though not from a long lineage of coffee growers, the current generation has taken the foundation laid by a father’s small-scale production and expanded it into a professionally managed specialty project.
