Harvested: July 2025 Taste notes: Bold with notes of dark chocolate and dried fruit "Our version of a Swedish ”mellanrost”. This coffee came to us through collaboration with a few of our wholesale friends in Gothenburg. Much like us they did not want to compromise in quality or sustainability while supporting small-holder producers. But their customers asked for something more ”familiar” and bold to finish off their meal. Together we started looking for a coffee from a family estate in Brazil. Next, we tried roasting it different than usual. Longer total time. Darker end temperature than our filter roasts, lighter than our espressos. The result? Our version of Swedish ”mellanrost”: A coffee that we gladly share with friends and family who want the familiarity of a profile they know and love, while also enjoying the comfort of knowing their coffee was grown in healthy soil, by people caring for their produce and getting paid for their labour." - Paulo and Jaqueline Miranda, a married couple who left the comfort and stability of the city life to realise their dream: To build a coffee farm from the ground up. They chose to plant themselves in the Chapada de Minas region, the same area where Paulo’s father Geraldo had started working back in the 90’s. He went from working on coffee farms, to running plantations and cooperatives, to being the CEO of Cafebras, one of the largest coffee trading companies in Brazil, and now a partner in Paulo and Jaqueline’s farm. They named it Santa Cecília after the family matriarch Cecília Maria dos Reis, a woman of simple origins and unwavering principles. They describe her as an honest, respectful and resilient person with lots of ethics and integrity. These are values that came with them when they first started the farm in 2019 and they are still running through every part of their work. The Miranda family run Santa Cecília with clear purpose: To grow sustainably, to honour people and nature and to produce the best coffee that they possibly can. Whole coffee beans roasted for filter.
