Timaná is an old town located in the department of Huila, southern Colombia, that was founded in the 16th century. The town lies in a hidden valley in the Andes Mountain range at a height of 1100 masl and is surrounded by hills that climb as high as 1800 masl. Because of the high altitude, the steady temperatures (10-25°) and the annual rainfall (at least 15 days per month), these surrounding hills have a lush and fertile environment that are ideal for coffee cultivation. Coffee growing with care for biodiversity and earth is deeply embedded in the Timana culture and its tradition was handed down from generation to generation. This lot consists of 100 % Castillo and was grown by smallholder farmers living and working nearby Timana. All cherries are picked manually when at their ripest and only the best cherries are selected for processing. Cherries are depulped and then oxidized for 48 hours to enhance clarity and complexity in the cup. Finally, parchment is sundried on raised beds until the desired humidity of 11 % is reached.
