> Cinnamon, Vanilla Custard, Lemon Myrtle Special Release This unique Caturron honey from Luis Aníbal Calderón showcases a rare varietal he discovered on his own farm. Grown in Huila, the cherries underwent 200 hours of anaerobic fermentation with spices as dry cherry in closed bags, followed by 50 hours depulped in concrete tanks. Drying took place over 22 days on raised beds under passive solar marquees. This 2022 harvest was frozen upon arrival to preserve ist character and start building our vintage list. It marks our very first release – a flavour bomb of cinnamon, vanilla, custard, lemon myrtle and floral notes.
