Careful hand harvesting 2\. Flotation in water to remove defects 3\. Anaerobic fermentation in sealed tanks for 96 hours at 20 degrees C 4\. Mechanical drying by to dehumidify the coffee for 14 hours at 42 degrees C 5\. Further 5 days of mechanical drying at 35 degrees C 6\.
