Hachi coffee project continues to showcase the cutting-edge scientific practices developed by Diego Bermudez being combined in junction with the quality crops of great farms. Hachi is a testament to the power of biotechnology and agroforestry, showcasing the power of collaboration in coffee production. We are very excited and honoured to be able to share the literal fruits of labour from this exciting project. The cherries are from Paraíso Farm. Nestled in the hills of Tunía, Cauca — one of Colombia’s premier coffee regions — Paraíso Farm sits at 1,950 meters, when cool temperatures and steady microclimates allow slow cherry maturation and complex flavor development. Rich volcanic soils and excellent drainage support exceptional coffee genetics, including the naturally muted Tena Biru variety and eight distinct Gesha selections unique to the farm. From Hachi: “The meaning of Nagomi is “Harmony” or “Peace of mind”. Nagomi expresses the quiet balance between contrasts — stillness within movement, calm within intensity. It is the serenity that arises not from silence, but from inner alignment. Washed Process follows the traditional sequence of pulping, fermentation, washing, and drying, executed under precise environmental control. Fermentation takes place in monitored tanks where temperature, pH, and duration are carefully managed, using either native microbiota or selected cultures depending on the sensory objective. After fermentation, the coffee is thoroughly washed and dried under controlled conditions to ensure uniform moisture reduction. The result is a clean and structured cup defined by vibrant acidity, balanced sweetness, and clear expression of cultivar and terroir.”
