José Elcias Martínez produces a brilliant Pink Bourbon with every harvest. Each pass through the seasons exhibits a healthy amount of fruit in the seed to cup. This most recent harvest, we get a rich display of condensed fruit, tropical diversity and light citrus zest. José's PinkB is uniquely big bodied without feeling super heavy. This flavor profile reminds us of prickly pear, citrus zest & candied grape. José and his wife, Francy have been farming coffee for years. The last twenty years of his work have been builing up to this Pink B. and his other premium varieties. Originally from Sinaí, Palestina, Huila - he has continued his family legacy with Finca El Casino. José and Francy also have a huge soft spot for abandoned dogs and have given an home to dozens over the years. Pink B. is understood to be genetically linked as Ethiopian Landrace type varietal. There are so many variants and iterations of this varietal in Colombia. José produces some of the most expressive we have seen of this variety. The quality of his plantation and processing sets him apart as award winning producer. They pick at peak ripeness and immediately depulp the cherries. After sorting for defects they ferment for about 30 hours. They dry and sort further until the coffee reaches a stable moisture content. The coffee arrived impeccably clean and consistent! Enjoy. Last Roast: Dec. 22nd. A few bags remaining. Shipped on Tuesdays. Our coffees are best after two weeks+ of the roast date.
