This coffee stood out on the table as a clean and lightly fruited success. Jhon Didier Trujillo is quickly making a name for himself with his immaculate Chiroso crops. This luxurious Landrace has now won our hearts, especially when it comes out like this. Expect notes of fruit-leather & understated berry. There is a firm structure with a medium+ amount of sweetness and acidity. This lot is mellow on the tart, with a subtle accent of mandarin acidity. A great coffee for those looking for a little more body in their espresso. This is our first time purchasing from Jhon Didier, though we have been tasting his coffee for some time. The strides towards greater and greater quality in the cup and on his farm has been amazing to watch. I have never seen a farmer progress this much so quickly. Jhon Didier Trujillo is a passionate coffee farmer who has dedicated his life to the field. On his farm, cultivating a variety of agricultural products, he seeks not only economic progress but also to dignify the coffee profession. With his hard work and commitment to quality, Jhon aspires to be a role model in the agricultural community and to contribute to the sustainable development of his region. Jhon Didier’s farm is like a little slice of paradise. It’s right by the Penderisco River, so the water keeps the land rich and the breeze creates the perfect weather for growing all kinds of plants. He grows lulo, avocado, plantains, and coffee, and he’s also got a few cows he looks after and milks. Picked at peak ripeness. Floated and sorted for defects. Depulped and washed. Fermented in clean water for up to 4 days. Dried on raised-beds in shade drying tents until moisture content reaches a stable at 10.5%. This is a refined processing method that has elevated the pronunciation of the cherry from Jhon's farm. Thank you Don Didier! Our coffees are best after two weeks+ of the roast date. Order by Sunday for Monday's roast.
