Ripe handpicked cherries are delivered to the nearby Worka washing station, which is owned and operated by the quality focused Melkalati Trading PLC. Cherries are pulped using an ‘Agard’ coffee processing machine and then soaked in water for 48hrs as part of the wet fermentation process. This quality focused approach promotes celebration of the history and character of these coffees, along with the skilled and dedicated smallholders responsible for growing them.
