What makes it especially interesting is the white honey process, rarely seen in Ethiopia, where most coffees are washed or natural. After depulping, only a very thin layer of mucilage is left on the parchment before drying, which preserves brightness and delicacy while adding a fruitiness to the cup. The result is washed-like clarity with a little extra sweetness, highlighting the floral character of Worka Chelchele without pushing the coffee into funky or heavy territory.
