It serves smallholder farmers from the nearby villages of Githiru, Gituba and Mukure, and is affiliated with Thirikwa Farmers’ Co-operative Society. Each producer farms less than one hectare, using compost and farm byproducts to maintain soil health, with inorganic fertilisers applied only when necessary. Ripe cherries are delivered to the factory on the day of harvest, where they are pulped using water from the Kiri River, fermented overnight, washed, soaked and sundried on raised tables. The parchment is regularly turned, sorted and stored in conditioning bins before milling.
