Colombia Cerro Azul Honey Gesha Espresso - Single Origin. 'Cerro Azul’ is the most famous of the five farms owned by Rigoberto Herrera and his brother Luis. Café Granja La Esperanza was established a century ago by their grandparents and has been producing microlots of the highest calibre for decades. Cerro Azul is a farm exclusively producing Gesha. The plants are grown on an elevated foothill of the Colombian Western mountain range. Cool air from the Pacific mixes with the warm air from the valley to create a perfect microclimate. Rich volcanic soils contribute to the depth and complexity of this exotic varietal resulting in an elegant cup profile. Due to Cerro Azul’s proximity to the equator and location, bushes are multi-flowering and the cherries they produce reach optimum levels of sugar. This farm is constantly producing Gesha lots throughout the year. Sustainable practices are intrinsic to Granja La Esperanza’s business philosophy and the hyper-productivity of this farm is proof of this. This honey processed Gesha was produced using cherry specifically chosen using Brix measurements. Cherries are pulped without water and dried using a mix of patios and silos. The coffee is dried at varying layered formations to promote the development of flavours and aromatic compounds during crucial stages of the process; the key to producing an elegant cup profile.
