This lot goes through a lesser-seen method in Ethiopia, being an Anaerobic Naturally processed coffee, where ripe coffee cherries are placed in sealed, oxygen-free tanks to ferment in a controlled environment. The cherries are then dried on raised African beds, this is where the fermentation creates bright, fruity character in the final cup.
