The diversity of micro-regions and heirloom varietals in Ethiopia provide such a wide flavour potential from one country, and this coffee is the perfect example of this. This lot goes through a lesser-seen method in Ethiopia, being an Anaerobic Naturally processed coffee, where ripe coffee cherries are placed in sealed, oxygen-free tanks to ferment in a controlled environment.
