We've been buying coffees from the COMSA cooperative for many years, and we are so pleased to have this coffee back in the building! From the Marcala region of Honduras comes this fully washed coffee made up of organic-certified producers that work with the cooperative to grow, process, and sell their coffee. COMSA is more than just a coffee processing powerhouse, they also run an international school to focus on education and the sharing of knowledge to help everyone in their community produce better coffee, they focus on sustainability, they have started their own recycling plant, and are a clear leader in the organic coffee community. Processing This coffee is fully washed, showcasing clean acidity with some nutty and chocolate characteristics. The coffee cherries are collected at the washing station to be sorted and processed.
