We have given this just enough rest, and careful dialing in to properly showcase this outstanding offering. This is a "Mosto Washed" process coffee in which the coffee cherries were meticulously handpicked at their peak ripeness and then carefully hand-selected. The process began with a double-phase fermentation: first, the whole cherries were fermented for 24 hours in open tanks. After this initial fermentation, the cherries were pulped and underwent a 72-hour maceration in closed tanks with mosto juice, extracted from the dry skin of Geisha cherries, added. Following this unique fermentation process, the coffee was thoroughly hand-washed using pure mountain spring water. Finally, the beans were dried on raised beds for 15 days, allowing the rich flavors to fully develop.
