Both have built serious reputations from their farms in Bruselas and Pitalito, Huila, and this lot is a collaboration between the two. Pink Bourbon Aji is a rare designer variety, thought to be a mutation of Bourbon, and grown almost exclusively in Colombia. The Gasca brothers cultivated this lot on Jhonatan's farm, Zarza, at elevations between 1,780 and 1,900 meters. The processing here was intentional and restrained: a washed approach designed to let the variety speak for itself rather than lean on fermentation. The result is something genuinely special. Soft floral notes open the cup, with peaches and cream in the body and a long finish of dark honey. It sits somewhere between a Gesha and a Sidra in personality but with a character all its own.
