The Kenya-styled Washed process, widely used in Kenya, is renowned for producing clean, crisp, and consistent coffee. This season, Doi Pangkhon experimented with double-staged fermentation, starting with an extended dry fermentation, followed by a shortened wet fermentation and finished with soaking.
Doi Pangkhon is located at an altitude of 1250-1450 masl, at 19 degrees north of the equator.
