## Ce que dit la marque

> Alirio Aguilera A precision natural process coffee from Huila, Colombia * * * Coffee Details Origin: San Isidro, Palestina, Huila, Colombia Producer: Alirio Aguilera Farm: Finca San Isidro Process: Natural, Precision Varietal: Pink Bourbon, Colombia Altitude: 1,600 masl * * * Tasting Notes Strawberry • Rhubarb • Hazelnut• Red Grape * * * To speak of Alirio Aguilera and Finca San Isidro is to speak of a life dedicated entirely to coffee. Alirio has transformed his 11-hectare farm in the Guachicos River Basin, in Palestina, Huila, into a benchmark of quality in the region. The work supports his wife and three children, who are active participants in the farm's production, and has helped elevate Colombia's reputation in the specialty coffee world. The farm sits at 1,600 metres, within a microclimate shaped by the Guachicos River Basin that provides thermal regulation and specific humidity levels favouring sugar development, especially in demanding varieties like Pink Bourbon. Alirio grows Colombia, Caturra, Castillo, and Pink Bourbon across his fully sun-exposed hectares. This lot uses Alirio's signature "Precision Natural" process, a method he has perfected to achieve a clean cup with intense fruit complexity by blending Pink Bourbon and Colombia varieties. Cherries are rigorously selected at peak ripeness, then undergo a 24 hour oxidation phase in the cherry to concentrate flavour precursors. The coffee then moves immediately to mechanical dryers for 4 to 5 days, halting microorganism growth and giving Alirio full control over water activity and the preservation of delicate sensory notes. In 2013, Alirio won the Cup of Excellence, the most prestigious accolade a coffee producer can receive. Today, Finca San Isidro remains a quality laboratory where family tradition meets advanced technique. * * * Best for: Filter • Pour Over
