Los Cipreses is located in the Naranjo district of Costa Rica’s West Valley. Originally founded by their father, the farm is now run by brothers Christian and Greivan, who have taken the project in a more experimental and quality-driven direction over recent years. The West Valley differs from the Central Valley in both altitude and climate. Influenced by Pacific Ocean weather patterns, the region tends to be drier and milder, with higher elevations that allow for slower cherry development and increased density. These conditions, combined with volcanic soils, create an ideal environment for expressive specialty lots. The farm takes its name from the cypress trees planted along its borders, which are also sold as Christmas trees during the holiday season. Coffee production here sits alongside this tradition, with a strong focus on varietal diversity and controlled processing. Among the varieties grown are SL28, Caturra, Geisha, Milenio and Sudan Rume. Sudan Rume is one of the most distinctive. Originally traced back to the Boma Plateau in South Sudan, it is known for its elongated cherries, low productivity and exceptional cup potential. It is not an easy variety to cultivate, but in the right conditions it can deliver remarkable aromatic intensity and layered sweetness. At Los Cipreses, Sudan Rume is paired with meticulous anaerobic processing. Cherries are fermented in a controlled oxygen-limited environment, allowing naturally occurring microorganisms to shape the development of sugars and fruit character before drying. This approach enhances depth and structure while preserving clarity. The result is a coffee that reflects both genetic rarity and technical precision - grown at altitude in the West Valley and handled with the kind of attention that defines modern Costa Rican specialty production.
