Grown on the lush slopes of La Esperanza at altitudes ranging from 1445 to 1571 masl, these beans thrive in a climate boasting 80-85% humidity. This unique terroir, coupled with a meticulous processing technique, results in a truly remarkable cup. What sets this coffee apart is its groundbreaking 168 hour anaerobic fermentation – the longest fermentation period we've ever featured! This extended process unlocks a depth of flavor unlike any other. Following fermentation, the beans were carefully dried for 8-12 days, further enhancing their complexity. We got rich notes of Black Plum, a bright, citrusy acidic Navel Orange and a smooth Vanilla as the cup cooled.
