Ripe cherries are handpicked and begin with a 40-hour open fermentation, followed by 40 hours of submerged anaerobic fermentation in tanks with fruit yeast inoculation. A thermal shock step helps stabilize and intensify aromatic compounds before the coffee is slowly sun-dried for around 15 days. We’ve roasted it ultra-light to let the nuances shine. Expect coconut cream sweetness, panela and sweet orange brightness, and juicy raspberry fruit — a layered and vibrant cup that reflects both experimentation and family dedication.
