> If I didn't know the process, I would say it's a washed coffee. No fermentation taste at all. Super clean for a hydro-natural (the green beans also looks like a washed coffee). An expressive but composed geisha with layered florals and juicy sweetness. orange blossom opens the cup, with lemon and green grape carrying through a long, sweet finish. fermentation adds depth and texture without overwhelming the geisha's delicate structure, sweetness builds gently, letting the florals and acidity stay articulate. the process ripe cherries are rested, dried briefly, then soaked overnight in water before depulping and washing. slow drying follows under a mix of direct sun and shade nets. the result sits between a natural and a washed coffee: fruit complexity and tartaric acidity with a remarkably clean finish. the producer Enrique López has made Finca Chelín one of Mexico's most exciting farms by pairing experimentation with restraint. his processing is built on small, deliberate adjustments to fermentation, resting and drying, refining cup structure rather than overpowering it. this geisha shows that philosophy: modern and expressive, yet transparent and elegant.
