The structure is tea-like and precise, with a long, clean finish. Processing follows a carefully extended washed protocol. The cherries are fermented in stages — both before and after pulping — with controlled turning throughout, before being slowly dried on raised beds. The result is a cup defined by clarity, balance and quiet complexity. Finca Eliza is part of the ChocoVilcaMundo (CVM) network — a collaboration between Ecuadorian and Colombian coffee producers focused on high-elevation, competition-level coffees.
