> Los Yarumos takes its name from the native yarumo trees that have long stood watch over the slopes where this coffee grows. Located in Timaná, Huila, this is a farm with deep roots and a bold vision for the future. At its helm is Yadimir Perez, a young and ambitious producer who runs the farm alongside his family with the kind of energy and determination that defines a new generation of Colombian coffee growing. Surrounded by a community of trailblazing farms that set the benchmark for what is possible in this region, Yadimir is not contentd to simply follow. He is striving to lead. The farm sits within the Cata Timaná project, a long-term collaboration built on education, trust, and genuine respect for origin. It is exactly the kind of environment where a producer like Yadimir thrives: learning from those around him, pushing his own standards higher, and channeling that ambition into every decision made on the farm. Long before specialty coffee became a global conversation, these slopes were already being cultivated with care, guided by inherited knowledge and respect for natural cycles. Yadimir carries that tradition forward while keeping his eyes firmly on the horizon. The Bourbon Ají varietal grown at Los Yarumos is processed through a traditional washed method designed to let the bean's intrinsic character speak without interference. Ripe cherries are carefully hand-selected before a controlled fermentation focused on clarity and aromatic expression. Thorough washing preserves the coffee's cleanliness and structure, followed by slow drying under controlled conditions and a final resting period to fully integrate the flavors. What arrives in the cup is elegant and quietly captivating. Mandarin and lemongrass lead with bright citrus-driven acidity, carried by a silky, clean body and a long, delicately sweet finish.
