Not for the faint of heart. This honey processed offering from Sumatra definitely challenges what we normally expect from coffees within this region! This lot comes from 600 small producers located in the Kerinci Valley, an area with rich, volcanic soil and surrounded by Seblat National Park. Traditionally, Sumatran coffees undergo “wet hulled” processing so seeing a honey processed lot peaked our interest! With this technique, cherries are pulped and the beans, instead of moving to fermentation/washing tanks, are immediately sent to drying. You can expect hints of jasmine and cedar balancing out accents of bright grapefruit and raisin.
