Home to Volcán Tajumulco, the highest peak in Central America, the region combines cool mountain forests with warmer Pacific influences, creating ideal conditions for exceptional coffee cultivation. This lot is produced by 20 smallholder farmers cultivating traditional varieties such as Bourbon and Typica on farms ranging from 0.5 to 6 hectares, at elevations between 1,300 and 1,800 meters above sea level. Coffee grows beneath native oak and forest shade, encouraging slow cherry maturation and greater complexity. Carefully hand-harvested cherries undergo more than 28 hours of fermentation before being slowly dried on raised beds. This deliberate approach preserves quality while allowing the unique terroir of San Marcos to shine. Tres Gigantes reflects the dedication of its producers and the remarkable diversity of one of Guatemala's most distinctive coffee regions. Flavour Profile This is a great everyday coffee, good as a batch brew or a easy espresso but with enough depth for the more nerdy home baristas to be able to play with it and extract delicate and complex flavours. It starts with good florals on the nose then, the first sip is full of fruity notes, a mix of red and green apples, paired with the sweet of the sugar cane. The aftertaste brings the milk chocolate note with a hint of raw almonds.
